Black pepper
1/2 teaspoon, freshly ground
Salt
1/2 teaspoon
Jalapeno
1, seeds removed and finely diced
Honey
1 tablespoon
Lime juice
juice of 1 large lime
Cilantro
1/4 cup, finely chopped
Red onion
1/4 cup, finely diced
Pineapple
1 cup, diced
Rhubarb
1 cup, diced

Instructions

  1. Prepare all the ingredients by dicing the rhubarb, pineapple, red onion, and jalapeno, and chopping the cilantro.
  2. In a medium-sized bowl, combine the diced rhubarb, pineapple, red onion, cilantro, and jalapeno.
  3. Add the lime juice, honey, salt, and freshly ground black pepper to the bowl.
  4. Stir well to ensure all the ingredients are well combined and evenly coated with the dressing.
  5. Cover the bowl and refrigerate for at least 30 minutes. This will allow the flavors to blend together, creating a more robust and unified taste.
