Ingredients

- Lime juice

- Cilantro
- 1/4 cup, finely chopped
- Red onion
- 1/4 cup, finely diced
- Pineapple
- 1 cup, diced
- Rhubarb
- 1 cup, diced
Instructions
- Prepare all the ingredients by dicing the rhubarb, pineapple, red onion, and jalapeno, and chopping the cilantro.
- In a medium-sized bowl, combine the diced rhubarb, pineapple, red onion, cilantro, and jalapeno.
- Add the lime juice, honey, salt, and freshly ground black pepper to the bowl.
- Stir well to ensure all the ingredients are well combined and evenly coated with the dressing.
- Cover the bowl and refrigerate for at least 30 minutes. This will allow the flavors to blend together, creating a more robust and unified taste.
