Servings: 8-10
Ingredients
- Rib roast
- 1 (5-7 pounds)
- Olive oil
- 2 tablespoons
- Garlic
- 5 cloves, minced
- Fresh rosemary
- 2 tablespoons, chopped
- Fresh thyme
- 2 tablespoons, chopped
- Salt
- 1 tablespoon
- Black pepper
- 1 tablespoon
Instructions
- Preheat your oven to 450°F (232°C).
- In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create a robust herb mixture.
- Rub the olive oil generously all over the rib roast to help the herb mixture adhere and enhance flavor.
- Coat the rib roast with the herb mixture, pressing it firmly onto the surface to form a flavorful crust.
- Place the rib roast, fat side up, on a rack in a roasting pan. This allows for even cooking and better air circulation.
- Roast the rib roast in the preheated oven for 15 minutes to create a nice sear.
- After 15 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting for about 1 hour and 45 minutes, or until the internal temperature reaches your desired doneness (135°F for medium-rare, 145°F for medium). Use a meat thermometer for accuracy.
- Once cooked, remove the rib roast from the oven and let it rest for 15-20 minutes. This resting period allows the juices to redistribute, ensuring a moist and tender roast.
- Slice the rib roast against the grain and serve, perhaps with a side of creamy horseradish sauce or a rich red wine reduction for an extra touch of flavor.
