Creamy Homemade Rice Pudding

Experience the comforting delight of a classic dessert with our Creamy Homemade Rice Pudding. Infused with warm spices like cinnamon and nutmeg, and sweetened with sugar, this dessert is a nostalgic nod to grandmother's kitchen. The plump raisins add a burst of sweetness and texture, while the vanilla extract rounds off the flavour with an aromatic touch. This recipe, with its roots in many cultures from Latin America to Asia, has been passed down through generations and is loved worldwide for its simplicity and heartwarming taste.

Servings: 4

Ingredients

  • Raisins (1/2 cup)
  • Ground nutmeg (1/4 teaspoon)
  • Ground cinnamon (1/2 teaspoon, plus extra for garnish)
  • Vanilla extract (1 teaspoon)
  • Granulated sugar (1/2 cup)
  • Whole milk (2 cups)
  • Cooked rice (1 1/2 cups)

Instructions

  1. In a large saucepan, combine the cooked rice, whole milk, granulated sugar, vanilla extract, ground cinnamon, and nutmeg.
  2. Place the saucepan over medium heat and stir consistently to prevent the milk from scorching at the bottom of the pan.
  3. Once the mixture starts to boil, reduce the heat to low and let it simmer. Continue to stir frequently for about 20-25 minutes, or until the rice is tender and the pudding has thickened to your desired consistency.
  4. Add the raisins into the pudding and stir well. Allow the pudding to cook for an additional 5 minutes on low heat.
  5. Remove the saucepan from the heat and let the rice pudding cool slightly. The pudding will continue to thicken as it cools.
  6. Serve the rice pudding warm or chilled, according to your preference. For a classic touch, garnish with a sprinkle of cinnamon just before serving.
