Raisins
1/2 cup
Ground nutmeg
1/4 teaspoon
Ground cinnamon
1/2 teaspoon, plus extra for garnish
Vanilla extract
1 teaspoon
Granulated sugar
1/2 cup
Whole milk
2 cups
Cooked rice
1 1/2 cups

Instructions

  1. In a large saucepan, combine the cooked rice, whole milk, granulated sugar, vanilla extract, ground cinnamon, and nutmeg.
  2. Place the saucepan over medium heat and stir consistently to prevent the milk from scorching at the bottom of the pan.
  3. Once the mixture starts to boil, reduce the heat to low and let it simmer. Continue to stir frequently for about 20-25 minutes, or until the rice is tender and the pudding has thickened to your desired consistency.
  4. Add the raisins into the pudding and stir well. Allow the pudding to cook for an additional 5 minutes on low heat.
  5. Remove the saucepan from the heat and let the rice pudding cool slightly. The pudding will continue to thicken as it cools.
  6. Serve the rice pudding warm or chilled, according to your preference. For a classic touch, garnish with a sprinkle of cinnamon just before serving.
