Herb Roasted Carrots with Thyme

Ingredients
- Carrots
- 1 pound, peeled and cut into sticks
- Olive oil
- 2 tablespoons
- Fresh thyme
- 2 teaspoons, chopped
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Honey (optional)
- 1 teaspoon, for extra sweetness
- Fresh parsley (optional)
- 1 tablespoon, chopped for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the carrot sticks with olive oil, chopped fresh thyme, salt, black pepper, and honey (if using). Toss well until the carrots are evenly coated.
- Spread the seasoned carrot sticks in a single layer on a baking sheet lined with parchment paper for easy cleanup.
- Roast in the preheated oven for 20-25 minutes, stirring once halfway through the cooking time, until the carrots are tender and slightly caramelized.
- Remove from the oven and transfer to a serving dish. If desired, sprinkle with fresh parsley for a burst of color and flavor.
