Chestnuts
1 pound (about 20-25 chestnuts)
Olive oil
1 tablespoon
Salt
1/2 teaspoon, or to taste
Fresh rosemary or thyme
1 tablespoon, finely chopped (optional)

  2. Using a sharp knife, carefully cut a small X on the flat side of each chestnut. This allows steam to escape during roasting and makes peeling easier.
  3. Place the prepared chestnuts on a baking sheet and drizzle with olive oil. Toss them gently to ensure they are evenly coated.
  4. Sprinkle the chestnuts with salt and, if desired, add the finely chopped fresh herbs for an aromatic touch.
  5. Roast the chestnuts in the preheated oven for 20-25 minutes, or until the shells have split open and the nuts inside are tender.
