Ingredients
- Frozen peas
- 2 cups
- Garlic cloves
- 4, unpeeled
- Olive oil
- 2 tablespoons
- Greek yogurt
- 1 cup
- Lemon juice
- 2 tablespoons, freshly squeezed
- Fresh mint leaves
- 1/4 cup, chopped + extra for garnish
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
Instructions
- Preheat the oven to 400°F (200°C).
- Spread the frozen peas on a baking sheet and drizzle with olive oil. Toss to ensure they are evenly coated.
- Add the unpeeled garlic cloves to the baking sheet along with the peas.
- Roast in the oven for 15-20 minutes, or until the peas are slightly golden and the garlic is soft and fragrant.
- Remove from the oven and let cool for a few minutes until they are manageable.
- In a food processor, combine the roasted peas, roasted garlic (squeezed out of their skins), lemon juice, Greek yogurt, chopped mint leaves, salt, and black pepper.
- Blend until smooth and creamy, scraping down the sides as needed.
- Taste the dip and adjust the seasoning if necessary.
- Transfer the dip to a serving bowl and garnish with additional mint leaves.
