Ingredients

Frozen peas
2 cups
Garlic cloves
4, unpeeled
Olive oil
2 tablespoons
Greek yogurt
1 cup
Lemon juice
2 tablespoons, freshly squeezed
Fresh mint leaves
1/4 cup, chopped + extra for garnish
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the frozen peas on a baking sheet and drizzle with olive oil. Toss to ensure they are evenly coated.
  3. Add the unpeeled garlic cloves to the baking sheet along with the peas.
  4. Roast in the oven for 15-20 minutes, or until the peas are slightly golden and the garlic is soft and fragrant.
  5. Remove from the oven and let cool for a few minutes until they are manageable.
  6. In a food processor, combine the roasted peas, roasted garlic (squeezed out of their skins), lemon juice, Greek yogurt, chopped mint leaves, salt, and black pepper.
  7. Blend until smooth and creamy, scraping down the sides as needed.
  8. Taste the dip and adjust the seasoning if necessary.
  9. Transfer the dip to a serving bowl and garnish with additional mint leaves.
  10. Serve with your favorite crackers, bread, or a colorful array of vegetable sticks.
