Potatoes
2 pounds, washed and cut into 1-inch pieces
Olive oil
3 tablespoons
Garlic powder
1 teaspoon
Paprika
1/2 teaspoon
Salt
1 teaspoon
Black pepper
1/2 teaspoon, freshly ground
Fresh parsley
2 tablespoons, finely chopped

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the cubed potatoes, olive oil, garlic powder, paprika, salt, and black pepper. Toss until the potatoes are well coated with the oil and spices.
  3. Spread the potatoes out in a single layer on the prepared baking sheet, ensuring they are not overcrowded to allow them to crisp up.
  4. Roast in the preheated oven for 15-20 minutes. Then, flip the potatoes and continue to roast for another 15-20 minutes, or until they are golden brown and crispy.
  5. Remove the potatoes from the oven and while still hot, sprinkle them with the chopped fresh parsley. Toss gently to combine.
