Ingredients

Red bell peppers
2 large, halved and seeded
Red chili peppers
3-4, depending on desired heat, stems removed
Garlic
3 cloves, peeled
Olive oil
2 tablespoons
Lemon juice
2 tablespoons, freshly squeezed
Sugar
1 tablespoon
Salt
1 teaspoon, or to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the red bell peppers in half and remove the seeds and stems.
  3. Place the red bell peppers and red chili peppers on a baking sheet, skin side up.
  4. Drizzle with olive oil and sprinkle with salt to enhance the flavors.
  5. Roast in the oven for 20-25 minutes, or until the peppers are charred and softened.
  6. Once roasted, remove from the oven and allow to cool for a few minutes.
  7. Peel off the skin from the peppers and discard it. This adds a smooth texture to your sauce.
  8. In a blender or food processor, combine the roasted peppers, chili peppers, garlic, lemon juice, salt, and sugar.
  9. Blend until smooth and creamy, adjusting seasoning to taste.
  10. Transfer the sauce to a jar or container and refrigerate until ready to use. The flavors will deepen as it sits.
