Roasted Red Pepper and Feta Dip

This creamy and flavorful dip is made with roasted red peppers and tangy feta cheese.

Ingredients

  • Pita chips or crackers (for serving)
  • Fresh parsley (2 tablespoons, chopped)
  • Salt and pepper (to taste)
  • Olive oil (1 tablespoon)
  • Lemon juice (1 tablespoon)
  • Garlic (2 cloves, minced)
  • Cream cheese (4 oz, softened)
  • Feta cheese (1 cup, crumbled)
  • Roasted red peppers (2 large, peeled and seeded)

Instructions

  1. Preheat the oven to 400°F.
  2. Place the roasted red peppers, feta cheese, cream cheese, minced garlic, lemon juice, olive oil, salt, and pepper in a food processor.
  3. Blend until smooth and creamy.
  4. Transfer the dip to an oven-safe dish and bake for 20-25 minutes, or until heated through and lightly golden on top.
  5. Remove from the oven and sprinkle with fresh parsley.
  6. Serve warm with pita chips or crackers.
