
Roasted Red Pepper and Feta Dip
This creamy and flavorful dip is made with roasted red peppers and tangy feta cheese.
Ingredients
- Pita chips or crackers (for serving)
- Fresh parsley (2 tablespoons, chopped)
- Salt and pepper (to taste)
- Olive oil (1 tablespoon)
- Lemon juice (1 tablespoon)
- Garlic (2 cloves, minced)
- Cream cheese (4 oz, softened)
- Feta cheese (1 cup, crumbled)
- Roasted red peppers (2 large, peeled and seeded)
Instructions
- Preheat the oven to 400°F.
- Place the roasted red peppers, feta cheese, cream cheese, minced garlic, lemon juice, olive oil, salt, and pepper in a food processor.
- Blend until smooth and creamy.
- Transfer the dip to an oven-safe dish and bake for 20-25 minutes, or until heated through and lightly golden on top.
- Remove from the oven and sprinkle with fresh parsley.
- Serve warm with pita chips or crackers.
