Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the olive oil, finely chopped fresh rosemary, garlic powder, salt, and freshly ground black pepper.
- Add the washed and cut potatoes to the bowl. Toss until the potatoes are well coated with the oil and seasoning mixture.
- Spread the potatoes in a single layer on a baking sheet. Ensure they are not overcrowded to achieve the perfect crispiness.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy. Flip the potatoes halfway through the roasting time for even browning.
- Remove from the oven and let cool for a few minutes before serving. Sprinkle with a pinch of sea salt if desired.
Tips
- For a flavour variation, try adding a sprinkle of smoked paprika or a squeeze of lemon juice over the potatoes before roasting.
- Choose high-starch potatoes, such as Russet or Yukon Gold, for the best roasting results.
- The potatoes can be cut into any shape, but consistent size is key to ensure even cooking.
