
Roasted Tomato and Basil Bruschetta
This delicious bruschetta is made with roasted tomatoes, fresh basil, and crusty bread.
Ingredients
- Baguette (1, sliced)
- Salt and pepper (to taste)
- Fresh basil leaves (1/2 cup, chopped)
- Balsamic vinegar (1 tablespoon)
- Garlic (2 cloves, minced)
- Olive oil (2 tablespoons)
- Roma tomatoes (6, halved)
Instructions
- Preheat the oven to 400°F.
- Place the halved tomatoes on a baking sheet and drizzle with olive oil. Season with salt and pepper.
- Roast the tomatoes in the oven for 20 minutes, or until they are soft and slightly caramelized.
- In a small bowl, mix together minced garlic, balsamic vinegar, and chopped basil.
- Remove the roasted tomatoes from the oven and let them cool slightly.
- Meanwhile, toast the baguette slices in a toaster or under the broiler until they are golden brown.
- Once the tomatoes have cooled, gently remove the skins and chop them into smaller pieces.
- In a large bowl, combine the roasted tomatoes with the garlic-balsamic-basil mixture. Season with additional salt and pepper if needed.
- Top each toasted baguette slice with a spoonful of the tomato mixture.
- Serve the bruschetta immediately and enjoy!
