
Roasted Vegetable Pizza
This delicious roasted vegetable pizza is topped with a medley of colorful vegetables and melted cheese.
Ingredients
- Salt and pepper (to taste)
- Parmesan cheese (1/4 cup, grated)
- Mozzarella cheese (1 cup, shredded)
- Fresh basil (1/4 cup, chopped)
- Cherry tomatoes (1 cup, halved)
- Mushrooms (8 ounces, sliced)
- Red onion (1, thinly sliced)
- Zucchini (1, sliced)
- Bell peppers (1 red, 1 yellow, 1 green, sliced)
- Olive oil (2 tablespoons)
- Pizza dough (1 pound)
Instructions
- Preheat the oven to 425°F.
- Roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the dough to a baking sheet or pizza stone.
- Brush the dough with olive oil.
- In a large bowl, toss the sliced bell peppers, zucchini, red onion, mushrooms, and cherry tomatoes with olive oil, salt, and pepper.
- Spread the vegetable mixture evenly over the pizza dough.
- Sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the vegetables.
- Bake for 20-25 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Remove from the oven and sprinkle with fresh basil.
- Slice and serve hot.
