Ingredients

- 2 pounds Lamb (shoulder or leg), cut into bite-sized pieces

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
- Add the ground cumin, coriander, turmeric, and cayenne pepper to the pot, stirring them into the onion mixture. Cook for 1 minute to bloom the spices.
- Incorporate the chopped tomatoes, cooking for about 5 minutes until they start to break down and release their juices.
- Reduce the heat to low, then stir in the yogurt until well combined, creating a creamy sauce.
- Add the lamb pieces to the pot, seasoning them with salt and pepper. Cook for about 10 minutes, allowing the lamb to brown slightly.
- Cover the pot and reduce the heat to low. Simmer for 15-20 minutes, or until the lamb is tender and fully cooked through. Stir occasionally to prevent sticking.
