Romesco Sauce

Ingredients

Olive oil
1/2 cup
Salt
1/2 teaspoon or to taste
Cayenne pepper
1/4 teaspoon
Smoked paprika
1/2 teaspoon
Red wine vinegar
2 tablespoons
Tomato paste
1 tablespoon
Garlic
2 cloves
Almonds
1/2 cup, toasted
Roasted red peppers
1 cup, jarred or freshly roasted

Instructions

  1. In a food processor, combine the roasted red peppers, toasted almonds, garlic, tomato paste, red wine vinegar, smoked paprika, cayenne pepper, and salt. Blend until the mixture is relatively smooth.
  2. While the food processor is running, slowly drizzle in the olive oil. Continue to blend until the sauce becomes creamy and well emulsified.
  3. Taste the sauce and adjust the seasoning if needed. Add more salt or a pinch more cayenne pepper for an extra kick if desired.
  4. Transfer the romesco sauce to a jar or airtight container. Refrigerate the sauce until you're ready to use it. The flavors will meld together and intensify as the sauce chills.
