Romesco Sauce

Ingredients
- Olive oil
- 1/2 cup
- Salt
- 1/2 teaspoon or to taste
- Cayenne pepper
- 1/4 teaspoon
- Smoked paprika
- 1/2 teaspoon
- Red wine vinegar
- 2 tablespoons
- Tomato paste
- 1 tablespoon
- Garlic
- 2 cloves
- Almonds
- 1/2 cup, toasted
- Roasted red peppers
- 1 cup, jarred or freshly roasted
Instructions
- In a food processor, combine the roasted red peppers, toasted almonds, garlic, tomato paste, red wine vinegar, smoked paprika, cayenne pepper, and salt. Blend until the mixture is relatively smooth.
- While the food processor is running, slowly drizzle in the olive oil. Continue to blend until the sauce becomes creamy and well emulsified.
- Taste the sauce and adjust the seasoning if needed. Add more salt or a pinch more cayenne pepper for an extra kick if desired.
- Transfer the romesco sauce to a jar or airtight container. Refrigerate the sauce until you're ready to use it. The flavors will meld together and intensify as the sauce chills.
