Romesco Sauce

- 1/2 cup Olive oil
- 1/2 teaspoon or to taste Salt
- 1/4 teaspoon Cayenne pepper
- 1/2 teaspoon Smoked paprika
- 2 tablespoons Red wine vinegar
- 1 tablespoon Tomato paste
- 2 cloves Garlic
- 1/2 cup, toasted Almonds
- 1 cup, jarred or freshly roasted Roasted red peppers

Instructions
- In a food processor, combine the roasted red peppers, toasted almonds, garlic, tomato paste, red wine vinegar, smoked paprika, cayenne pepper, and salt. Blend until the mixture is relatively smooth.
- While the food processor is running, slowly drizzle in the olive oil. Continue to blend until the sauce becomes creamy and well emulsified.
