Roosterkoek, meaning 'grilled bread' in Afrikaans, is a cherished South African street food that captures the essence of outdoor gatherings and the joy of sharing. Traditionally cooked over an open flame on a braai (barbecue), these fluffy, golden rolls are perfect for slathering with butter and jam or serving as hearty buns for your favorite grilled meats. The smoky flavor from the grill adds a unique twist, making every bite an unforgettable experience. Whether enjoyed at a summer picnic or a cozy winter gathering, Roosterkoek brings the warmth of South African hospitality right to your table.

Servings: 8

Ingredients

Warm water
1 cup
Granulated sugar
1 tablespoon
Active dry yeast
2 teaspoons
All-purpose flour
3 cups
Salt
1 teaspoon
Olive oil
2 tablespoons

Instructions

  1. In a small bowl, combine the warm water and granulated sugar. Stir until the sugar is fully dissolved.
  2. Sprinkle the active dry yeast over the warm water mixture and let it sit for 5-10 minutes, or until it becomes frothy, indicating the yeast is active.
  3. In a large mixing bowl, combine the all-purpose flour and salt, mixing well.
  4. Create a well in the center of the flour mixture and pour in the yeast mixture along with the olive oil.
  5. Stir with a wooden spoon until a sticky dough forms. Transfer the dough to a floured surface and knead for about 10 minutes, or until the dough is smooth and elastic.
  6. Place the kneaded dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  7. Once risen, punch down the dough to release any air bubbles, and divide it into 8 equal pieces. Shape each piece into a smooth ball.
  8. Place the dough balls on a lightly greased baking sheet, cover with a towel, and allow them to rise for another 30 minutes.
  9. Preheat your grill to medium heat. Carefully place the dough balls on the grill and cook for about 15 minutes, turning occasionally until they are golden brown and sound hollow when tapped on the bottom.
