Instructions
- In a medium bowl, combine the chopped rosemary, minced garlic, olive oil, lemon juice, salt, and black pepper to create a fragrant marinade.
- Cut the chicken breasts into bite-sized pieces and place them in a ziplock bag or a shallow dish.
- Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 1 hour, or overnight for optimal flavor.
- Preheat the grill to medium-high heat, ensuring it's hot and ready for the skewers.
- Soak the wooden skewers in water for 30 minutes to prevent burning on the grill.
- Once the chicken has marinated, thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto the wooden skewers, alternating between ingredients for a colorful presentation.
- Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F) and the vegetables are tender and slightly charred.
- Remove the skewers from the grill and let them rest for a few minutes before serving. Garnish with additional fresh rosemary if desired.
Tips
- Feel free to add or substitute other vegetables such as zucchini, mushrooms, or asparagus for variety.
- For a spicy kick, add crushed red pepper flakes to the marinade.
- Serve these skewers with a side of tzatziki sauce or a fresh green salad for a complete meal.
