to taste
Olive oil
3 tablespoons, divided
Garlic
4 cloves, minced
Breadcrumbs
1 cup, preferably fresh
Parmesan cheese
1 cup, grated
Fresh rosemary
3 tablespoons, finely chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped rosemary, grated Parmesan cheese, breadcrumbs, minced garlic, 2 tablespoons of olive oil, salt, and pepper. Mix until well combined.
  3. Pat the pork loin dry with paper towels and season generously with salt and pepper on all sides.
  4. Spread the rosemary and Parmesan mixture evenly over the pork loin, pressing it gently to ensure it adheres well.
  5. Drizzle the remaining tablespoon of olive oil over the crusted pork loin for added moisture and flavor.
  6. Place the pork loin on a baking sheet or in a roasting pan.
  7. Roast in the preheated oven for 45-50 minutes, or until the internal temperature reaches 145°F (63°C). Use a meat thermometer for accuracy.
