Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the finely chopped fresh rosemary, minced garlic, fresh lemon juice, olive oil, salt, and freshly ground black pepper. Stir until all ingredients are well-mixed.
- Place the chicken breasts in a baking dish. Pour the prepared rosemary mixture over the chicken, making sure each piece is thoroughly coated. Use your hands to gently massage the mixture into the chicken, if necessary.
- Roast the chicken in the preheated oven for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C). The chicken should no longer be pink in the center.
- Remove the chicken from the oven and let it rest for about 5 minutes before serving. This allows the juices to redistribute throughout the chicken, ensuring a moist and flavorful dish.
- Serve your Rosemary Roasted Chicken with a side of roasted vegetables or a fresh salad for a complete, healthy meal. Enjoy!
