Roti Prata is a sumptuous Indian flatbread, adored for its crisp exterior and the soft, fluffy layers within. This culinary delight, which originated from the Indian subcontinent, has found a loving home in South-East Asian countries like Singapore and Malaysia. It's traditionally savoured with a hearty side of curry and is a breakfast staple, but its versatility makes it a welcome addition to any meal.

Ingredients

All-purpose flour
2 cups
Salt
1 teaspoon
Water
1 cup, adjust as needed
Vegetable oil
1/2 cup, for brushing and frying

Instructions

  1. In a large mixing bowl, combine the all-purpose flour and salt.
  2. Gradually add water while stirring the mixture. Keep adding until a dough starts to form. Adjust the water quantity to achieve a soft, non-sticky dough.
  3. Turn the dough onto a lightly floured surface. Knead it for approximately 5 minutes, until it becomes smooth and elastic.
  4. Divide the dough into equal-sized small balls and let them rest for at least 10 minutes. This resting time allows the gluten to relax for easier rolling.
  5. Roll out each ball into a thin circle, aiming for an almost translucent thickness if possible.
  6. Brush the surface of the dough with vegetable oil.
  7. Fold the dough in half, then fold it again to form a triangle shape. This folding technique lends to the flaky layers of the Roti Prata.
  8. Heat a non-stick pan over medium heat and add a little vegetable oil.
  9. Place the folded dough on the heated pan and cook for about 2-3 minutes on each side, until it turns golden brown and crispy.
  10. Repeat the process with the remaining dough balls.
  11. Serve your Roti Prata hot, paired with curry or your favorite dipping sauce. A dhal curry or a spicy fish curry would be traditional accompaniments.
