Ingredients
- 2 cups Basmati rice
- 4 cups Water
- 1/2 cup Golden raisins
- 1/2 cup Almond slivers
- 4 tablespoons Unsalted butter
- 1 teaspoon or to taste Salt
- 1/2 teaspoon or to taste Black pepper
- 1/2 teaspoon Turmeric
- 1/2 teaspoon Cardamom
- 1 teaspoon Cinnamon
- 4 cloves, minced Garlic
- 1 large, finely chopped Onion
- 1 lb, cut into cubes Lamb or beef

Instructions
- Rinse the basmati rice under cold running water until the water runs clear. Soak it in water for 30 minutes, then drain and set aside.
- In a large pot, melt two tablespoons of butter over medium heat. Add the finely chopped onion and minced garlic, and sauté until they turn a golden brown color.
- Add the meat cubes to the pot and cook until they're browned on all sides.
- Add the cinnamon, cardamom, turmeric, salt, and black pepper to the pot. Stir everything together to ensure the meat is well-coated with the spices.
- Add the soaked and drained rice to the pot, and stir it in with the meat and spices until everything is well combined.
- Pour in the water, then increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 30 minutes, or until the rice is fully cooked and the meat is tender.
- While the rice and meat are cooking, heat the remaining two tablespoons of butter in a separate pan over medium heat. Add the almond slivers and golden raisins, and sauté until they're golden and fragrant.
- Serve the Roz Meammar hot, garnished with the sautéed almonds and raisins.
Tips
- For an extra touch of richness, you can stir in a dollop of Greek yogurt into the rice before serving.
- You can also use chicken or fish instead of lamb/beef for a different flavor profile.
