Ingredients

Basmati rice
2 cups
Water
4 cups
Golden raisins
1/2 cup
Almond slivers
1/2 cup
Unsalted butter
4 tablespoons
Salt
1 teaspoon or to taste
Black pepper
1/2 teaspoon or to taste
Turmeric
1/2 teaspoon
Cardamom
1/2 teaspoon
Cinnamon
1 teaspoon
Garlic
4 cloves, minced
Onion
1 large, finely chopped
Lamb or beef
1 lb, cut into cubes

Instructions

  1. Rinse the basmati rice under cold running water until the water runs clear. Soak it in water for 30 minutes, then drain and set aside.
  2. In a large pot, melt two tablespoons of butter over medium heat. Add the finely chopped onion and minced garlic, and sauté until they turn a golden brown color.
  3. Add the meat cubes to the pot and cook until they're browned on all sides.
  4. Add the cinnamon, cardamom, turmeric, salt, and black pepper to the pot. Stir everything together to ensure the meat is well-coated with the spices.
  5. Add the soaked and drained rice to the pot, and stir it in with the meat and spices until everything is well combined.
  6. Pour in the water, then increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 30 minutes, or until the rice is fully cooked and the meat is tender.
  7. While the rice and meat are cooking, heat the remaining two tablespoons of butter in a separate pan over medium heat. Add the almond slivers and golden raisins, and sauté until they're golden and fragrant.
  8. Serve the Roz Meammar hot, garnished with the sautéed almonds and raisins.
