
Russian Black Bread
This hearty Russian black bread is packed with flavor and perfect for pairing with soups and stews.
Ingredients
- Vegetable oil (2 tablespoons)
- Salt (1 teaspoon)
- Warm water (1 1/2 cups)
- Active dry yeast (2 teaspoons)
- Honey (1 tablespoon)
- Molasses (2 tablespoons)
- Caraway seeds (2 teaspoons)
- Instant coffee (1 tablespoon)
- Cocoa powder (2 tablespoons)
- All (purpose flour - 1 cup)
- Whole wheat flour (1 cup)
- Rye flour (2 cups)
Instructions
- In a large mixing bowl, combine the rye flour, whole wheat flour, all-purpose flour, cocoa powder, instant coffee, and caraway seeds.
- In a separate bowl, dissolve the molasses and honey in warm water. Sprinkle the yeast over the mixture and let it sit for 5 minutes, or until foamy.
- Pour the yeast mixture into the dry ingredients and mix until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes, or until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
- Preheat the oven to 375°F (190°C).
- Punch down the dough and shape it into a loaf. Place the loaf on a greased baking sheet.
- Cover the loaf with a clean kitchen towel and let it rise for another 30 minutes.
- Bake the bread for 40-45 minutes, or until it sounds hollow when tapped on the bottom.
- Remove the bread from the oven and let it cool on a wire rack before slicing.
