Russian Black Bread

This hearty Russian black bread is packed with flavor and perfect for pairing with soups and stews.

Ingredients

  • Vegetable oil (2 tablespoons)
  • Salt (1 teaspoon)
  • Warm water (1 1/2 cups)
  • Active dry yeast (2 teaspoons)
  • Honey (1 tablespoon)
  • Molasses (2 tablespoons)
  • Caraway seeds (2 teaspoons)
  • Instant coffee (1 tablespoon)
  • Cocoa powder (2 tablespoons)
  • All (purpose flour - 1 cup)
  • Whole wheat flour (1 cup)
  • Rye flour (2 cups)

Instructions

  1. In a large mixing bowl, combine the rye flour, whole wheat flour, all-purpose flour, cocoa powder, instant coffee, and caraway seeds.
  2. In a separate bowl, dissolve the molasses and honey in warm water. Sprinkle the yeast over the mixture and let it sit for 5 minutes, or until foamy.
  3. Pour the yeast mixture into the dry ingredients and mix until a dough forms.
  4. Knead the dough on a lightly floured surface for about 5 minutes, or until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  6. Preheat the oven to 375°F (190°C).
  7. Punch down the dough and shape it into a loaf. Place the loaf on a greased baking sheet.
  8. Cover the loaf with a clean kitchen towel and let it rise for another 30 minutes.
  9. Bake the bread for 40-45 minutes, or until it sounds hollow when tapped on the bottom.
  10. Remove the bread from the oven and let it cool on a wire rack before slicing.
