Russian Cabbage Soup

This hearty Russian cabbage soup, also known as Shchi, is made with cabbage, potatoes, carrots, onions, and beef broth.

Ingredients

  • Salt and pepper (to taste)
  • Dill (2 tablespoons, chopped)
  • Bay leaf (1)
  • Beef broth (6 cups)
  • Cabbage (1 small head, shredded)
  • Potatoes (2 medium, peeled and cubed)
  • Carrots (2 medium, diced)
  • Onion (1 large, chopped)
  • Olive oil (2 tablespoons)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and carrots, and cook until the onion is translucent, about 5 minutes.
  3. Add the potatoes, cabbage, beef broth, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the vegetables are tender.
  4. Remove the bay leaf and stir in the chopped dill.
  5. Serve hot and enjoy!
