Olive oil

Onion

Carrots

Potatoes
3, peeled and cubed
Cabbage
1/2 head, shredded
Beef broth
6 cups
Bay leaf

1/2 teaspoon, or to taste
Fresh dill
1/4 cup, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the chopped onion and sliced carrots to the pot. Sauté for about 5 minutes, or until the onion becomes translucent and fragrant.
  3. Stir in the cubed potatoes and shredded cabbage, mixing well to combine all the ingredients.
  4. Pour in the beef broth, and add the bay leaf, salt, and pepper. Increase the heat to bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and let the soup simmer uncovered for about 45 minutes, or until all the vegetables are tender and the flavors meld together beautifully.
  6. After simmering, carefully remove the bay leaf from the pot. Stir in the chopped fresh dill just before serving to enhance the flavor and aroma.
  7. Ladle the soup into bowls, and garnish with additional fresh dill if desired. Serve hot, accompanied by crusty bread for a complete meal.
