Russian Cabbage Soup (Shchi)

Ingredients
- Olive oil
- 2 tablespoons
- Onion
- 1, chopped
- Carrots
- 2, sliced
- Potatoes
- 3, peeled and cubed
- Cabbage
- 1/2 head, shredded
- Beef broth
- 6 cups
- Bay leaf
- 1
- Salt
- 1 teaspoon, or to taste
- Black pepper
- 1/2 teaspoon, or to taste
- Fresh dill
- 1/4 cup, chopped
Instructions
- In a large pot, heat the olive oil over medium heat until shimmering.
- Add the chopped onion and sliced carrots to the pot. Sauté for about 5 minutes, or until the onion becomes translucent and fragrant.
- Stir in the cubed potatoes and shredded cabbage, mixing well to combine all the ingredients.
- Pour in the beef broth, and add the bay leaf, salt, and pepper. Increase the heat to bring the mixture to a boil.
- Once boiling, reduce the heat to low and let the soup simmer uncovered for about 45 minutes, or until all the vegetables are tender and the flavors meld together beautifully.
- After simmering, carefully remove the bay leaf from the pot. Stir in the chopped fresh dill just before serving to enhance the flavor and aroma.
- Ladle the soup into bowls, and garnish with additional fresh dill if desired. Serve hot, accompanied by crusty bread for a complete meal.
