Ice cubes
1 cup
Cardamom powder
1/2 teaspoon
Saffron strands
a pinch
Sugar
2 tablespoons
Water
1/2 cup
Yogurt
2 cups, chilled

Instructions

  1. Begin by soaking the saffron strands in 2 tablespoons of warm water for about 5-10 minutes. This process, known as blooming, helps to release the color and flavor of the saffron.
  2. In a blender, add the chilled yogurt, water, and sugar. The sugar can be adjusted according to taste.
  3. Next, add the bloomed saffron water and cardamom powder to the blender. Cardamom adds a fragrant note that pairs well with the saffron.
  4. Blend all the ingredients until well combined and a creamy consistency is achieved.
  5. Add the ice cubes and blend again until the lassi is frothy and chilled. The ice not only cools the lassi but also contributes to its frothy texture.
  6. Pour the lassi into glasses and serve immediately. For a touch of elegance, garnish with a few extra strands of saffron or a sprinkle of cardamom powder on top.
