Instructions
- Begin by soaking the saffron strands in 2 tablespoons of warm water for about 5-10 minutes. This process, known as blooming, helps to release the color and flavor of the saffron.
- In a blender, add the chilled yogurt, water, and sugar. The sugar can be adjusted according to taste.
- Next, add the bloomed saffron water and cardamom powder to the blender. Cardamom adds a fragrant note that pairs well with the saffron.
- Blend all the ingredients until well combined and a creamy consistency is achieved.
- Add the ice cubes and blend again until the lassi is frothy and chilled. The ice not only cools the lassi but also contributes to its frothy texture.
- Pour the lassi into glasses and serve immediately. For a touch of elegance, garnish with a few extra strands of saffron or a sprinkle of cardamom powder on top.
Tips
- For a vegan version, replace the yogurt with a dairy-free yogurt alternative such as almond or coconut yogurt.
- If you prefer a thinner consistency, you can add more water or a splash of milk.
- If you do not have cardamom, you can also use a dash of nutmeg or cinnamon for a different flavor profile.
