Instructions
- Bring a large pot of salted water to a boil, add the pasta and cook according to package instructions for al dente. Drain the pasta, reserving 1/2 cup of pasta water, and set aside.
- While the pasta is cooking, season the salmon fillets on both sides with salt and pepper.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon fillets, skin side down, and cook for 4-5 minutes per side, or until the salmon is cooked to your liking. Remove the salmon from the skillet and set aside on a plate.
- In the same skillet, add the minced garlic and cook for 1 minute, or until fragrant.
- Pour in the heavy cream into the skillet and bring it to a simmer, scraping up any browned bits from the bottom of the skillet. Allow the cream to simmer for 2-3 minutes, stirring occasionally.
- Stir in the grated Parmesan cheese and continue to cook the sauce until the cheese is melted and the sauce is smooth.
- Add the cooked pasta to the skillet and toss to coat in the cream sauce. If the sauce is too thick, add a bit of the reserved pasta water to thin it out.
- Gently flake the cooked salmon into large chunks and add them to the skillet. Toss gently to combine.
- Sprinkle the pasta with the chopped fresh dill and give it a final seasoning with salt and pepper, if needed.
- Serve the Creamy Salmon Pasta hot with a sprinkle of extra Parmesan cheese on top, if desired. Enjoy!
