Transport yourself to the heart of Italy with this divine Creamy Salmon Pasta. This dish features melt-in-your-mouth salmon chunks wrapped in a luxurious, silky cream sauce, with perfectly al dente pasta. The dish is completed with a sprinkle of fresh dill and grated Parmesan cheese, which add a burst of flavor and a touch of elegance. It is a perfect quick but decadent meal for a weeknight dinner or a special treat for guests.

Ingredients

Salt and black pepper
to taste
Fresh dill
2 tablespoons, chopped
Parmesan cheese
1/2 cup, grated
Heavy cream
1 cup
Garlic
2 cloves, minced
Olive oil
2 tablespoons
Pasta
8 ounces
Salmon fillets
2 (6 ounce) fillets

Instructions

  1. Bring a large pot of salted water to a boil, add the pasta and cook according to package instructions for al dente. Drain the pasta, reserving 1/2 cup of pasta water, and set aside.
  2. While the pasta is cooking, season the salmon fillets on both sides with salt and pepper.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon fillets, skin side down, and cook for 4-5 minutes per side, or until the salmon is cooked to your liking. Remove the salmon from the skillet and set aside on a plate.
  4. In the same skillet, add the minced garlic and cook for 1 minute, or until fragrant.
  5. Pour in the heavy cream into the skillet and bring it to a simmer, scraping up any browned bits from the bottom of the skillet. Allow the cream to simmer for 2-3 minutes, stirring occasionally.
  6. Stir in the grated Parmesan cheese and continue to cook the sauce until the cheese is melted and the sauce is smooth.
  7. Add the cooked pasta to the skillet and toss to coat in the cream sauce. If the sauce is too thick, add a bit of the reserved pasta water to thin it out.
  8. Gently flake the cooked salmon into large chunks and add them to the skillet. Toss gently to combine.
  9. Sprinkle the pasta with the chopped fresh dill and give it a final seasoning with salt and pepper, if needed.
  10. Serve the Creamy Salmon Pasta hot with a sprinkle of extra Parmesan cheese on top, if desired. Enjoy!
