Instructions
- Preheat the oven to 400°F (200°C).
- Cut 4 large pieces of aluminum foil, approximately 12x12 inches each, and lay them flat on a clean surface.
- Place a salmon fillet in the center of each foil piece.
- Evenly distribute the sliced zucchini, yellow squash, red bell pepper, red onion, minced garlic, lemon slices, and chopped dill around the salmon in each packet.
- Drizzle each packet with 1 tablespoon of olive oil and season generously with salt and black pepper.
- Carefully fold the foil over the salmon and vegetables, sealing the edges tightly to create a secure packet.
- Place the foil packets on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the salmon is opaque and flakes easily with a fork, and the vegetables are tender.
- Once cooked, carefully open the foil packets, being cautious of the hot steam, and transfer the salmon and veggies to plates.
- Serve hot, garnished with additional fresh dill if desired, and enjoy the delightful medley of flavors!
Tips
- For added flavor, you can marinate the salmon in a mixture of olive oil, lemon juice, and garlic for 30 minutes before assembling the packets.
- Feel free to swap out the vegetables for your favorites, such as asparagus, broccoli, or cherry tomatoes.
- These packets can also be cooked on a grill for a lovely smoky flavor.
