Ingredients

Salmon fillets
4, skinless
Zucchini
1, sliced
Yellow squash
1, sliced
Red bell pepper
1, sliced
Red onion
1, sliced
Garlic
3 cloves, minced
Fresh dill
2 tablespoons, chopped
Lemon
1, thinly sliced
Olive oil
4 tablespoons
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut 4 large pieces of aluminum foil, approximately 12x12 inches each, and lay them flat on a clean surface.
  3. Place a salmon fillet in the center of each foil piece.
  4. Evenly distribute the sliced zucchini, yellow squash, red bell pepper, red onion, minced garlic, lemon slices, and chopped dill around the salmon in each packet.
  5. Drizzle each packet with 1 tablespoon of olive oil and season generously with salt and black pepper.
  6. Carefully fold the foil over the salmon and vegetables, sealing the edges tightly to create a secure packet.
  7. Place the foil packets on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the salmon is opaque and flakes easily with a fork, and the vegetables are tender.
  8. Once cooked, carefully open the foil packets, being cautious of the hot steam, and transfer the salmon and veggies to plates.
