Classic Salmon BLT Sandwich

Ingredients

  • Bread slices (4)
  • Salmon fillets (2 (6 ounces each))
  • Salt and pepper (to taste)
  • Lemon juice (1 tablespoon)
  • Bacon (4 slices)
  • Lettuce (4 leaves)
  • Tomato (1, sliced)
  • Avocado (1, sliced)
  • Mayonnaise (2 tablespoons)

Instructions

  1. Preheat the grill or grill pan over medium-high heat.
  2. Season the salmon fillets evenly with salt, pepper, and lemon juice.
  3. Place the salmon on the grill and cook for about 4-5 minutes per side, or until the salmon is cooked through and easily flakes with a fork.
  4. While the salmon is grilling, cook the bacon slices in a skillet over medium heat until they are crispy. Once done, transfer the bacon to a paper towel to drain and cool.
  5. Toast the bread slices until they are golden brown. Be sure to keep an eye on them to prevent burning.
  6. Spread the mayonnaise evenly on one side of each toasted bread slice.
  7. Assemble the sandwich in the following order: bread slice with mayonnaise, lettuce, tomato slices, avocado slices, grilled salmon, and bacon. Top with the second bread slice, mayo side down.
