  • Salmon fillets (1 pound, skinless)
  • Breadcrumbs (1/2 cup)
  • Egg (1, beaten)
  • Green onions (2, finely chopped)
  • Dill (2 tablespoons, fresh or 1 tablespoon dried)
  • Lemon zest (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Black pepper (1/4 teaspoon)
  • Olive oil (2 tablespoons, for cooking)
  • Burger buns (4, toasted)
  • Mayonnaise (1/4 cup)
  • Red onion (1/2, thinly sliced)
  • Tomato (1, sliced)
  • Lettuce (4 leaves, preferably romaine or butter lettuce)

Instructions

  1. In a food processor, pulse the salmon fillets until coarsely chopped, being careful not to over-process.
  2. In a large bowl, combine the chopped salmon, breadcrumbs, beaten egg, green onions, dill, lemon zest, salt, and pepper. Mix until just combined.
  3. Divide the mixture into 4 equal portions and shape each portion into a patty, about 1-inch thick.
  4. Heat the olive oil in a skillet over medium heat. Once hot, add the salmon patties to the skillet.
  5. Cook the salmon patties for about 4-5 minutes per side, or until they are cooked through and golden brown on the outside.
