Ingredients
- Salmon fillets (1 pound, skinless)
- Breadcrumbs (1/2 cup)
- Egg (1, beaten)
- Green onions (2, finely chopped)
- Dill (2 tablespoons, fresh or 1 tablespoon dried)
- Lemon zest (1 teaspoon)
- Salt (1/2 teaspoon)
- Black pepper (1/4 teaspoon)
- Olive oil (2 tablespoons, for cooking)
- Burger buns (4, toasted)
- Mayonnaise (1/4 cup)
- Red onion (1/2, thinly sliced)
- Tomato (1, sliced)
- Lettuce (4 leaves, preferably romaine or butter lettuce)
Instructions
- In a food processor, pulse the salmon fillets until coarsely chopped, being careful not to over-process.
- In a large bowl, combine the chopped salmon, breadcrumbs, beaten egg, green onions, dill, lemon zest, salt, and pepper. Mix until just combined.
- Divide the mixture into 4 equal portions and shape each portion into a patty, about 1-inch thick.
- Heat the olive oil in a skillet over medium heat. Once hot, add the salmon patties to the skillet.
- Cook the salmon patties for about 4-5 minutes per side, or until they are cooked through and golden brown on the outside.
- Meanwhile, toast the burger buns if desired, either in the oven or on a grill.
- Spread mayonnaise on the bottom half of each bun, adding a touch of lemon juice to the mayonnaise for extra zest if desired.
- Place a salmon patty on top of the mayonnaise, then layer with lettuce, slices of tomato, and red onion.
- Cover with the top half of the bun and serve immediately with your favorite side dishes, such as sweet potato fries or a fresh salad.
