Ingredients

Salmon fillets
1 pound, skinless
Breadcrumbs
1/2 cup
Egg
1, beaten
Green onions
2, finely chopped
Dill
2 tablespoons, fresh or 1 tablespoon dried
Lemon zest
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Olive oil
2 tablespoons, for cooking
Burger buns
4, toasted
Mayonnaise
1/4 cup
Red onion
1/2, thinly sliced
Tomato
1, sliced
Lettuce
4 leaves, preferably romaine or butter lettuce

Instructions

  1. In a food processor, pulse the salmon fillets until coarsely chopped, being careful not to over-process.
  2. In a large bowl, combine the chopped salmon, breadcrumbs, beaten egg, green onions, dill, lemon zest, salt, and pepper. Mix until just combined.
  3. Divide the mixture into 4 equal portions and shape each portion into a patty, about 1-inch thick.
  4. Heat the olive oil in a skillet over medium heat. Once hot, add the salmon patties to the skillet.
  5. Cook the salmon patties for about 4-5 minutes per side, or until they are cooked through and golden brown on the outside.
  6. Meanwhile, toast the burger buns if desired, either in the oven or on a grill.
  7. Spread mayonnaise on the bottom half of each bun, adding a touch of lemon juice to the mayonnaise for extra zest if desired.
  8. Place a salmon patty on top of the mayonnaise, then layer with lettuce, slices of tomato, and red onion.
  9. Cover with the top half of the bun and serve immediately with your favorite side dishes, such as sweet potato fries or a fresh salad.
