Ingredients
- Salmon fillets
- 1 pound, skinless
- Breadcrumbs
- 1/2 cup
- Egg
- 1, beaten
- Green onions
- 2, finely chopped
- Dill
- 2 tablespoons, fresh or 1 tablespoon dried
- Lemon zest
- 1 teaspoon
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Olive oil
- 2 tablespoons, for cooking
- Burger buns
- 4, toasted
- Mayonnaise
- 1/4 cup
- Red onion
- 1/2, thinly sliced
- Tomato
- 1, sliced
- Lettuce
- 4 leaves, preferably romaine or butter lettuce
Instructions
- In a food processor, pulse the salmon fillets until coarsely chopped, being careful not to over-process.
- In a large bowl, combine the chopped salmon, breadcrumbs, beaten egg, green onions, dill, lemon zest, salt, and pepper. Mix until just combined.
- Divide the mixture into 4 equal portions and shape each portion into a patty, about 1-inch thick.
- Heat the olive oil in a skillet over medium heat. Once hot, add the salmon patties to the skillet.
- Cook the salmon patties for about 4-5 minutes per side, or until they are cooked through and golden brown on the outside.
- Meanwhile, toast the burger buns if desired, either in the oven or on a grill.
- Spread mayonnaise on the bottom half of each bun, adding a touch of lemon juice to the mayonnaise for extra zest if desired.
- Place a salmon patty on top of the mayonnaise, then layer with lettuce, slices of tomato, and red onion.
- Cover with the top half of the bun and serve immediately with your favorite side dishes, such as sweet potato fries or a fresh salad.
Tips
- For added flavor, try mixing in some capers or a dash of hot sauce into the salmon mixture.
- You can grill the salmon patties instead of pan-frying for a smoky flavor.
- Serve with a side of homemade tartar sauce or a squeeze of fresh lemon for extra brightness.
