Ingredients
- 1 pound, skinless Salmon fillets
- 1/2 cup Breadcrumbs
- 1, beaten Egg
- 2, finely chopped Green onions
- 2 tablespoons, fresh or 1 tablespoon dried Dill
- 1 teaspoon Lemon zest
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 2 tablespoons, for cooking Olive oil
- 4, toasted Burger buns
- 1/4 cup Mayonnaise
- 1/2, thinly sliced Red onion
- 1, sliced Tomato
- 4 leaves, preferably romaine or butter lettuce Lettuce

Instructions
- In a food processor, pulse the salmon fillets until coarsely chopped, being careful not to over-process.
- In a large bowl, combine the chopped salmon, breadcrumbs, beaten egg, green onions, dill, lemon zest, salt, and pepper. Mix until just combined.
- Divide the mixture into 4 equal portions and shape each portion into a patty, about 1-inch thick.
- Heat the olive oil in a skillet over medium heat. Once hot, add the salmon patties to the skillet.
- Cook the salmon patties for about 4-5 minutes per side, or until they are cooked through and golden brown on the outside.
- Meanwhile, toast the burger buns if desired, either in the oven or on a grill.
- Spread mayonnaise on the bottom half of each bun, adding a touch of lemon juice to the mayonnaise for extra zest if desired.
