Grilled Salmon Caesar Salad
Hailing from the ancient times of Roman Empire, Caesar Salad has been a timeless classic. Our version, the Grilled Salmon Caesar Salad, marries the rich flavors of the sea with the crisp, fresh notes of a traditional Caesar salad. Succulent salmon fillets, seasoned to perfection and grilled to a tantalizing finish, sit atop a bed of crunchy romaine lettuce. The salad is sprinkled with homemade crunchy croutons and freshly-grated Parmesan cheese, then lightly dressed with a homemade tangy Caesar dressing. This salad is not only a feast for the taste buds, but also a nutritious, balanced meal.

- 1/2 cup, freshly grated Parmesan cheese
- 1 cup Croutons
- 1 head, washed and chopped Romaine lettuce
- 4 (6 ounces each) Salmon fillets
- 1 cup mayonnaise, 2 cloves garlic minced, 1 tablespoon Dijon mustard, 1 tablespoon Worcestershire sauce, 1/2 cup freshly grated Parmesan cheese, Salt and pepper to taste Caesar dressing ingredients

Instructions
- Preheat the grill to medium-high heat.
- Season the salmon fillets with salt, pepper, and half the lemon juice.
- Grill the salmon for 4-5 minutes per side, or until cooked through. Remove the salmon from the grill and let it rest for a few minutes.
- While the salmon is resting, make the Caesar dressing. Combine mayonnaise, minced garlic, Dijon mustard, Worcestershire sauce, Parmesan cheese, remaining lemon juice, salt and pepper in a bowl. Whisk until well combined.
- In a large bowl, combine the chopped romaine lettuce, croutons, and grated Parmesan cheese.
- Drizzle the Caesar dressing and extra olive oil over the salad, then toss to coat evenly.
- Divide the salad onto plates and top each with a grilled salmon fillet.
- Serve immediately and enjoy!
Tips
- The Caesar dressing can be made ahead of time and stored in the fridge for up to a week. Before using, give it a good stir.
- For an extra crunch, try adding some toasted pine nuts or walnuts to the salad.
- If you prefer your salmon well-done, increase the grilling time to 6-7 minutes per side.
