Canned salmon
15 oz, drained and flaked
Egg
1, beaten
Breadcrumbs
1 cup
Green onions
1/4 cup, finely chopped
Fresh dill
2 tablespoons, chopped
Lemon zest
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Vegetable oil
1/4 cup, for frying
Mayonnaise
1/2 cup
Lemon juice
2 tablespoons
Garlic
1 clove, minced

Instructions

  1. In a large mixing bowl, combine the flaked canned salmon, beaten egg, breadcrumbs, chopped green onions, dill, lemon zest, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  2. Shape the mixture into small patties, approximately 2 inches in diameter, ensuring they are compact to hold together during cooking.
  3. Heat the vegetable oil in a large skillet over medium heat. Once hot, carefully place the salmon patties in the skillet, ensuring not to overcrowd the pan.
  4. Cook the croquettes for 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain any excess oil.
  5. While the croquettes are cooking, prepare the lemon aioli by whisking together the mayonnaise, lemon juice, minced garlic, salt, and black pepper in a small bowl until smooth and creamy.
