Servings: 4

Ingredients

Honey
1 tablespoon
Lime juice
2 tablespoons
Cilantro
1/4 cup, finely chopped
Red onion
1/4 cup, finely diced
Red bell pepper
1/4 cup, finely diced
Mango
1 large, peeled and diced
Black pepper
1/2 teaspoon
Salt
1/2 teaspoon
Olive oil
2 tablespoons
Salmon fillets
4 (6 oz each)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season each salmon fillet evenly with salt and black pepper.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Once hot, add the salmon fillets to the skillet, skin side down. Cook for 3-4 minutes on each side until golden brown and crispy.
  5. Transfer the seared salmon fillets to a baking sheet and bake in the preheated oven for 8-10 minutes, or until the salmon is cooked to your liking.
  6. While the salmon is in the oven, prepare the mango salsa. In a bowl, combine the diced mango, red bell pepper, red onion, chopped cilantro, lime juice, and honey. Mix well until all ingredients are evenly distributed.
  7. Once the salmon is done, let it rest for a few minutes before serving. This allows the juices to redistribute throughout the fillet, making it even more succulent.
  8. Serve the salmon fillets hot, topped generously with the vibrant mango salsa. Enjoy this tropical feast!
