Salsa Taquera

- 3-4, stems removed Serrano chiles
- 1 pound, husked and rinsed Tomatillos

Instructions
- Place the tomatillos and serrano chiles in a large pot and add enough water to cover them.
- Bring the water to a boil over high heat. Once boiling, reduce the heat to low and let it simmer until the tomatillos change color and become soft, approximately 10 minutes.
- Carefully drain the tomatillos and chiles, then transfer them to a blender.
- Add the peeled garlic, chopped onion, freshly chopped cilantro, and salt to the blender.
- Blend the mixture until it reaches a smooth consistency. Ensure all ingredients are well-blended to infuse flavors.
- Taste the salsa. If necessary, adjust the salt or add more chiles for extra heat.
- Allow the salsa taquera to cool down before serving. This salsa is best served chilled and can be stored in the refrigerator for up to a week.
