Ingredients
- Ground veal shoulder
- 1 pound
- Ground pork belly
- 1 pound
- Salt
- 2 teaspoons
- Pepper
- 1 teaspoon
- Nutmeg
- 1/2 teaspoon
- White wine
- 1/4 cup
- Sausage casings
- 10 feet, rinsed
- Olive oil
- for grilling
- Rustic bread
- 8 slices
- Mustard

Instructions
- In a large bowl, combine the ground veal, ground pork, salt, pepper, nutmeg, and white wine. Mix until the ingredients are well distributed.
- Soak the sausage casings in a bowl of cold water to make them easier to work with.
- Using a sausage stuffer, gently stuff the meat mixture into the casings. Be careful not to overstuff. Twist the sausages into 6-inch links.
- Preheat your grill to medium heat. Lightly brush the grill grates with olive oil to prevent the sausages from sticking.
- Grill the sausages for about 7 minutes on each side, or until they're cooked through and browned. Ensure they reach an internal temperature of 160°F (71°C) for food safety.
