Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the Italian sausages to the pot and cook until browned on all sides, about 8–10 minutes. Remove the sausages from the pot and slice them into bite-sized pieces.
- In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and softened, about 5 minutes.
- Stir in the cannellini beans, diced tomatoes (with their juices), chicken broth, and chopped rosemary. Bring the mixture to a gentle simmer.
- Return the sliced sausages back into the pot. Season with salt and pepper to taste.
- Cover the pot and let the stew simmer for 30 minutes, stirring occasionally to ensure it doesn't stick. This will allow the flavors to meld beautifully.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh rosemary if desired, and provide crusty bread for dipping.
Tips
- For an extra layer of flavor, consider adding a splash of white wine before adding the broth.
- You can substitute the cannellini beans with other beans like great northern or navy beans for a different texture.
- If you like a bit of heat, add a pinch of red pepper flakes when sautéing the onions and garlic.
