Ingredients

Small new potatoes
2 pounds, thoroughly washed
Salt
1 cup (or more, to saturate water)
Unsalted butter
1/2 cup (for serving)
Fresh herbs (optional)
chopped parsley or chives, for garnish

Instructions

  1. Rinse the small new potatoes under cold water to remove any dirt.
  2. Place the potatoes in a large pot and add enough water to cover them completely.
  3. Stir in the salt. The water should be saturated with salt, which means you should be able to see some salt settling at the bottom of the pot.
  4. Bring the water to a rolling boil over high heat.
  5. Once boiling, reduce the heat to medium and cook the potatoes until they are fork-tender, about 20 minutes.
  6. While the potatoes are boiling, melt the unsalted butter in a small saucepan over low heat. Stir occasionally until fully melted.
  7. Once cooked, drain the potatoes in a colander and allow them to dry for a few minutes.
  8. Transfer the potatoes to a serving bowl and drizzle with melted butter. Toss gently to coat.
  9. If desired, garnish with fresh herbs like parsley or chives for an added touch of flavor and color.
  10. Serve warm, allowing guests to dip the potatoes in the melted butter.
