
Salted Caramel Macarons
These delicate French pastries are a sweet and salty delight. The macarons have a crisp shell and a soft interior, filled with a rich salted caramel filling.
Ingredients
- Sea salt (1/4 teaspoon)
- Caramel sauce (1/2 cup)
- Salt (1/4 teaspoon)
- Granulated sugar (1/4 cup)
- Egg whites (3 large)
- Powdered sugar (1 cup)
- Almond flour (1 3/4 cups)
Instructions
- Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a food processor, combine the almond flour and powdered sugar and process until finely ground.
- In a large bowl, beat the egg whites until they hold soft peaks. Gradually add the granulated sugar and beat until the mixture holds stiff peaks.
- Sift the almond flour mixture over the egg whites and fold until the mixture is smooth and shiny.
- Transfer the batter to a pastry bag fitted with a 1/2 inch (1.25 cm) tip and pipe 1 inch (2.5 cm) circles onto the prepared baking sheets.
- Bake the macarons for 15 minutes, until they are crisp and firm. Let cool completely on the baking sheets.
- To make the filling, stir together the caramel sauce and sea salt.
- Once the macarons are cool, spread a small amount of the filling onto the flat side of one macaron and sandwich it with another. Repeat with the remaining macarons and filling.
