Salted Caramel Macarons

These delicate French pastries are a sweet and salty delight. The macarons have a crisp shell and a soft interior, filled with a rich salted caramel filling.

Ingredients

  • Sea salt (1/4 teaspoon)
  • Caramel sauce (1/2 cup)
  • Salt (1/4 teaspoon)
  • Granulated sugar (1/4 cup)
  • Egg whites (3 large)
  • Powdered sugar (1 cup)
  • Almond flour (1 3/4 cups)

Instructions

  1. Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a food processor, combine the almond flour and powdered sugar and process until finely ground.
  3. In a large bowl, beat the egg whites until they hold soft peaks. Gradually add the granulated sugar and beat until the mixture holds stiff peaks.
  4. Sift the almond flour mixture over the egg whites and fold until the mixture is smooth and shiny.
  5. Transfer the batter to a pastry bag fitted with a 1/2 inch (1.25 cm) tip and pipe 1 inch (2.5 cm) circles onto the prepared baking sheets.
  6. Bake the macarons for 15 minutes, until they are crisp and firm. Let cool completely on the baking sheets.
  7. To make the filling, stir together the caramel sauce and sea salt.
  8. Once the macarons are cool, spread a small amount of the filling onto the flat side of one macaron and sandwich it with another. Repeat with the remaining macarons and filling.
