Ingredients

Vegetable oil
enough for deep frying
Black pepper
1/2 teaspoon, freshly ground
All-purpose flour
1/2 cup
Eggs
2, beaten
Parsley
1/4 cup, finely chopped
Garlic
2 cloves, minced
Potatoes
2 large, peeled
Salted cod
1 pound, boneless

Instructions

  1. Begin by soaking the salted cod in cold water for 24 hours, changing the water every 6-8 hours to remove excess salt.
  2. Boil the potatoes in a large pot until they are tender enough to be easily pierced with a fork. Drain the potatoes, then mash until smooth.
  3. In a separate pot, boil the soaked and drained cod until it easily flakes apart. Drain the cod, then flake it with a fork.
  4. In a large bowl, combine the mashed potatoes, flaked cod, minced garlic, chopped parsley, beaten eggs, flour, and freshly ground black pepper. Mix until all ingredients are well incorporated.
  5. Heat the vegetable oil in a deep fryer or large, deep pot to 375°F (190°C). Use enough oil to fully submerge the fritters.
  6. Carefully drop spoonfuls of the cod mixture into the hot oil and fry until they turn a deep golden brown, about 5 minutes. Be sure not to overcrowd the pot.
  7. Use a slotted spoon to remove the fritters from the oil and drain on paper towels. Serve the fritters hot, possibly with a squeeze of fresh lemon or a dip of your choice.
