Ingredients
- Mustard oil
- 2 tablespoons
- Cumin powder
- 1 teaspoon
- Turmeric powder
- 1/2 teaspoon
- Salt

- Roasted beaten rice (chiura)
- 1 cup, soaked
- Roasted sesame seeds
- 2 tablespoons
- Roasted peanuts
- 2 tablespoons
- Roasted soybeans
- 1/4 cup
- Lemon
- 1, juiced
- Cilantro
- 1/4 cup, chopped
- Green chilies
- 2, chopped
- Garlic
- 2 cloves, minced
- Ginger
- 1 tablespoon, grated
- Ghee
- 2 tablespoons
- Yogurt
- 1 cup
- Potatoes
- 2, boiled and diced
- Black-eyed peas (bodi)
- 1 cup, boiled
Instructions
- Wash the roasted beaten rice (chiura) and soak it in water for 5 minutes. Drain the water and set aside.
- In a pan, heat the ghee over medium heat. Add the grated ginger, minced garlic, and chopped green chilies. Sauté for about a minute until fragrant.
- Add the boiled black-eyed peas and diced potatoes to the pan. Sprinkle with turmeric powder, cumin powder, and salt. Mix well and cook for an additional 5 minutes, allowing the flavors to meld.
- In a separate bowl, whisk the yogurt until smooth. Season with salt to taste and set aside.
- On a large serving plate, arrange the soaked roasted beaten rice (chiura) as the base. Layer the cooked black-eyed peas and potatoes mixture on top.
- Drizzle the seasoned yogurt over the mixture, followed by the roasted soybeans, roasted peanuts, roasted sesame seeds, and a sprinkle of additional roasted beaten rice (chiura) for crunch.
- Finally, drizzle mustard oil and freshly squeezed lemon juice over the entire dish and garnish with chopped cilantro.
- Serve immediately, and enjoy the rich and diverse flavors of Samay Baji!
