Instructions

  1. Wash the roasted beaten rice (chiura) and soak it in water for 5 minutes. Drain the water and set aside.
  2. In a pan, heat the ghee over medium heat. Add the grated ginger, minced garlic, and chopped green chilies. Sauté for about a minute until fragrant.
  3. Add the boiled black-eyed peas and diced potatoes to the pan. Sprinkle with turmeric powder, cumin powder, and salt. Mix well and cook for an additional 5 minutes, allowing the flavors to meld.

  6. Drizzle the seasoned yogurt over the mixture, followed by the roasted soybeans, roasted peanuts, roasted sesame seeds, and a sprinkle of additional roasted beaten rice (chiura) for crunch.

  8. Serve immediately, and enjoy the rich and diverse flavors of Samay Baji!

Tips

  • 💡 You can add more vegetables like carrots or peas for additional flavor and nutrition.
  • 💡 If you prefer a spicier version, increase the amount of green chilies or add a pinch of chili powder.
  • 💡 For a vegan option, substitute ghee with coconut oil and omit the yogurt or use a plant-based yogurt alternative.
