Experience the vibrant flavors of Nepal with Samay Baji, a traditional Newari dish that showcases a delightful combination of textures and tastes. Ingredients

Mustard oil
2 tablespoons
Cumin powder
1 teaspoon
Turmeric powder
1/2 teaspoon
Salt
to taste
Roasted beaten rice (chiura)
1 cup, soaked
Roasted sesame seeds
2 tablespoons
Roasted peanuts
2 tablespoons
Roasted soybeans
1/4 cup
Lemon
1, juiced
Cilantro
1/4 cup, chopped
Green chilies
2, chopped
Garlic
2 cloves, minced
Ginger
1 tablespoon, grated
Ghee
2 tablespoons
Yogurt
1 cup
Potatoes
2, boiled and diced
Black-eyed peas (bodi)
1 cup, boiled

Instructions

  1. Wash the roasted beaten rice (chiura) and soak it in water for 5 minutes. Drain the water and set aside.
  2. In a pan, heat the ghee over medium heat. Add the grated ginger, minced garlic, and chopped green chilies. Sauté for about a minute until fragrant.
  3. Add the boiled black-eyed peas and diced potatoes to the pan. Sprinkle with turmeric powder, cumin powder, and salt. Mix well and cook for an additional 5 minutes, allowing the flavors to meld.
  4. In a separate bowl, whisk the yogurt until smooth. Season with salt to taste and set aside.
  5. On a large serving plate, arrange the soaked roasted beaten rice (chiura) as the base. Layer the cooked black-eyed peas and potatoes mixture on top.
  6. Drizzle the seasoned yogurt over the mixture, followed by the roasted soybeans, roasted peanuts, roasted sesame seeds, and a sprinkle of additional roasted beaten rice (chiura) for crunch.
  7. Finally, drizzle mustard oil and freshly squeezed lemon juice over the entire dish and garnish with chopped cilantro.
  8. Serve immediately, and enjoy the rich and diverse flavors of Samay Baji!
