Ingredients
- Sanddabs
- 4 (about 1 pound total)
- All-purpose flour
- 1/2 cup, for dredging
- Salt
- 1 teaspoon, to taste
- Black pepper
- 1/2 teaspoon, to taste
- Unsalted butter
- 4 tablespoons
- Lemon
- 1, juiced and zested
- Fresh parsley
- 2 tablespoons, chopped for garnish
Instructions
- Rinse the sanddabs under cold water and pat them dry with paper towels.
- Season both sides of the sanddabs liberally with salt and pepper.
- Place the flour in a shallow dish and dredge each sanddab in the flour, shaking off any excess.
- In a large skillet, heat 2 tablespoons of unsalted butter over medium-high heat until melted and bubbly.
- Carefully add the sanddabs to the skillet and cook for 2-3 minutes on each side, until they are golden brown and crispy. Be gentle when flipping to avoid breaking the fish.
- Once cooked, transfer the sanddabs to a plate lined with paper towels to drain any excess oil.
- In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Once melted, add the lemon juice and zest, stirring to combine.
- Drizzle the lemon butter sauce over the sanddabs before serving, and garnish with chopped parsley.
- Serve the sanddabs hot, accompanied by lemon wedges for an extra citrusy kick.
Tips
- For a touch of heat, sprinkle some red pepper flakes into the lemon butter sauce.
- Pair the sanddabs with a light salad or steamed vegetables for a complete meal.
- If you like a crunchier texture, consider adding breadcrumbs to the flour mixture.
