Instructions
- In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain any excess fat.
- Add the diced onion, minced garlic, cumin, chili powder, and salt to the skillet. Cook for an additional 5 minutes, stirring occasionally, until the onion is softened and fragrant.
- Stir in the black beans and cooked rice, mixing well to combine. Cook for another 2-3 minutes, allowing the mixture to heat through.
- Warm the flour tortillas in a separate skillet over low heat or in the microwave for about 30 seconds until pliable.
- Lay a warmed tortilla flat on a clean surface. Place a generous scoop of the beef and bean mixture in the center. Top with shredded cheese, lettuce, diced tomato, sliced avocado, sour cream, and salsa.
- Carefully fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito. Repeat with the remaining tortillas and filling.
- Serve the Santa Barbara Burritos warm, garnished with extra salsa and avocado slices if desired. Enjoy!
Tips
- For a spicier burrito, add diced jalapeños or hot sauce to the filling.
- You can substitute ground beef with ground turkey or chicken for a lighter option.
- Feel free to experiment with different toppings like corn, olives, or pickled onions.
