Santa Cruz Omelette

Ingredients
- Butter
- 2 tablespoons
- Salt

- Black pepper

- Cheddar cheese
- 1 cup, shredded
- Avocado
- 1, sliced
- Bacon
- 4 slices
- Eggs
- 4 large
Instructions
- In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove from the skillet and allow to drain on paper towels. Once cooled, chop into bite-sized pieces.
- In the same skillet, melt the butter over medium heat, allowing the flavors of the bacon to infuse the butter.
- In a mixing bowl, beat the eggs and season with salt and pepper to taste. Whisk until the mixture is well blended.
- Pour the beaten eggs into the skillet, tilting the pan to evenly distribute them. Cook undisturbed for about 2-3 minutes, or until the edges start to set.
- Sprinkle the shredded cheddar cheese over half of the omelette, then layer the chopped bacon and sliced avocado on top of the cheese.
- Using a spatula, carefully fold the other half of the omelette over the filling. Cook for an additional 1-2 minutes, or until the cheese is melted and the eggs are fully set.
- Slide the omelette onto a plate and serve hot. For an extra touch, garnish with additional avocado slices and a sprinkle of black pepper.
