Santa Cruz Omelette

Experience the vibrant flavors of the California coast with this hearty Santa Cruz Omelette, brimming with creamy avocado, crispy bacon, and rich cheddar cheese. Ingredients

Butter
2 tablespoons
Salt
to taste
Black pepper
to taste
Cheddar cheese
1 cup, shredded
Avocado
1, sliced
Bacon
4 slices
Eggs
4 large

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Remove from the skillet and allow to drain on paper towels. Once cooled, chop into bite-sized pieces.
  2. In the same skillet, melt the butter over medium heat, allowing the flavors of the bacon to infuse the butter.
  3. In a mixing bowl, beat the eggs and season with salt and pepper to taste. Whisk until the mixture is well blended.
  4. Pour the beaten eggs into the skillet, tilting the pan to evenly distribute them. Cook undisturbed for about 2-3 minutes, or until the edges start to set.
  5. Sprinkle the shredded cheddar cheese over half of the omelette, then layer the chopped bacon and sliced avocado on top of the cheese.
  6. Using a spatula, carefully fold the other half of the omelette over the filling. Cook for an additional 1-2 minutes, or until the cheese is melted and the eggs are fully set.
  7. Slide the omelette onto a plate and serve hot. For an extra touch, garnish with additional avocado slices and a sprinkle of black pepper.
