Ingredients

Original recipe serves 8

Glutinous rice flour
2 cups
Coconut milk
2 cups
White sugar
1 cup
Ube flavoring
1 teaspoon
Pandan flavoring
1 teaspoon
Grated coconut
1 cup (for topping)
Coconut oil or butter
for greasing molds

Instructions

  1. In a large mixing bowl, combine the glutinous rice flour, coconut milk, and white sugar. Mix thoroughly until the mixture is smooth and well-blended.
  2. Divide the mixture into three equal parts, approximately 1 cup each.
  3. In one part, add the ube flavoring and mix until the color is even and well incorporated.
  4. In another part, add the pandan flavoring and mix until the mixture transforms into a vibrant green.
  5. Leave the third part of the mixture plain for a beautiful layered effect.
  6. Grease the llanera molds with coconut oil or butter to prevent sticking.
  7. Pour the plain mixture into one mold, the ube mixture into another, and the pandan mixture into the third mold, layering them as desired.
  8. Prepare a steamer and place the molds inside. Steam for about 20 minutes or until the mixture is set and firm to the touch.
  9. Once set, carefully remove the molds from the steamer and let them cool to room temperature.
  10. After cooling, gently remove the sapin sapin from the molds and slice them into serving portions.
  11. Serve chilled or at room temperature, topped with a generous sprinkle of grated coconut for added texture and flavor.
