Sardenaira is a delightful Italian specialty from the picturesque region of Liguria, often referred to as the birthplace of pesto. This dish is a close cousin to pizza, characterized by its vibrant toppings that include savory anchovies, briny black olives, and a rich tomato sauce, all coming together on a golden, crispy crust. Perfectly seasoned with fresh oregano and garlic, Sardenaira offers a savory explosion of flavors that pays homage to the Mediterranean’s culinary heritage. Enjoy it as a hearty appetizer or as a main dish that transports you straight to the Italian Riviera.

Servings: 4

Ingredients

Pizza dough
1 pound, store-bought or homemade
Tomato sauce
1 cup, preferably homemade or high-quality store-bought
Anchovies
6-8 fillets, packed in oil
Black olives
1/2 cup, pitted and sliced
Garlic
3 cloves, minced
Fresh oregano
1 tablespoon, chopped (or 1 teaspoon dried oregano)
Olive oil
2 tablespoons, plus more for drizzling
Salt
to taste
Pepper
to taste

Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up as well.
  2. On a floured surface, roll out the pizza dough to your desired thickness, typically about 1/4 inch thick for a crispy base.
  3. Transfer the rolled-out dough onto a parchment-lined baking sheet or a preheated pizza stone.
  4. Spread the tomato sauce evenly over the dough, leaving a small border around the edges for the crust.
  5. Evenly sprinkle the minced garlic over the tomato sauce.
  6. Arrange the anchovy fillets and sliced black olives over the sauce, distributing them evenly.
  7. Drizzle the olive oil over the toppings, and then sprinkle with fresh oregano, salt, and pepper to taste.
  8. Bake in the preheated oven for about 15-20 minutes, or until the crust is golden brown and the toppings are bubbly.
  9. Once baked, remove from the oven and let cool for a few minutes before slicing into squares or wedges to serve.
