Sata Andagi (Okinawan Doughnuts)

Ingredients
- All-purpose flour
- 2 cups
- Granulated sugar
- 1/2 cup
- Baking powder
- 1 tablespoon
- Egg
- 1, large
- Milk
- 1/2 cup
- Vanilla extract
- 1 teaspoon
- Vegetable oil
- for frying
- Powdered sugar
- for dusting
Instructions
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, and granulated sugar until well combined.
- In a separate bowl, beat the egg and then add the milk and vanilla extract. Mix well until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; it's okay if there are a few lumps.
- In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
- Using a cookie scoop or a spoon, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot. Fry in batches, turning occasionally, until they are golden brown and cooked through, about 3-4 minutes.
- Once cooked, remove the sata andagi from the oil and drain on a paper towel-lined plate to remove excess oil.
- Repeat the frying process with the remaining batter.
- Before serving, generously dust the sata andagi with powdered sugar for a sweet finish.
