
Satay
Chicken satay is a popular Southeast Asian dish made with marinated and grilled chicken skewers, served with a peanut sauce.
Ingredients
- Cilantro (2 tablespoons, chopped)
- Peanuts (1/4 cup, crushed)
- Skewers (8, soaked in water)
- Honey (1 tablespoon)
- Lime juice (2 tablespoons)
- Soy sauce (2 tablespoons)
- Peanut butter (1/4 cup)
- Coconut milk (1/4 cup)
- Brown sugar (1 tablespoon)
- Ginger (1 teaspoon, grated)
- Garlic (2 cloves, minced)
- Lime juice (2 tablespoons)
- Soy sauce (2 tablespoons)
- Chicken breast (1 lb, cut into thin strips)
Instructions
- In a bowl, combine the soy sauce, lime juice, minced garlic, grated ginger, brown sugar, coconut milk, and peanut butter. Mix well to make the marinade.
- Add the chicken strips to the marinade and toss to coat. Let it marinate for at least 1 hour, or overnight in the refrigerator.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated chicken strips onto the soaked skewers.
- Grill the chicken skewers for about 3-4 minutes per side, or until cooked through and slightly charred.
- In a small saucepan, combine the soy sauce, lime juice, honey, and a tablespoon of water. Heat over low heat until warmed through.
- Serve the grilled chicken satay with the peanut sauce, crushed peanuts, and chopped cilantro on the side.
