Instructions
- In a mixing bowl, whisk together the soy sauce, lime juice, minced garlic, grated ginger, brown sugar, coconut milk, and peanut butter until smooth and well combined. This will be your marinade for the chicken.
- Add the sliced chicken breast to the marinade, ensuring each piece is evenly coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, or for best results, overnight to maximize flavor infusion.
- Preheat your grill or grill pan over medium-high heat. Make sure to oil the grill grates well to prevent the chicken from sticking.
- While the grill is heating, thread the marinated chicken strips onto the soaked skewers, leaving a little space between each piece to ensure even cooking.
- Grill the chicken skewers for approximately 3-4 minutes on each side, or until the chicken is cooked through and achieves beautiful char marks, ensuring a juicy interior.
- For the peanut sauce, in a small saucepan over low heat, combine 1 tablespoon of soy sauce, 1 tablespoon of lime juice, honey, and a tablespoon of water. Stir until warmed through and slightly thickened, about 2-3 minutes.
- Serve the grilled chicken satay hot, paired with the rich peanut sauce on the side. Garnish with crushed peanuts and freshly chopped cilantro for added flavor and presentation. Enjoy the explosion of flavors!
Tips
- For an extra kick, add a teaspoon of chili paste or sriracha to the marinade.
- Feel free to substitute chicken with shrimp or tofu for a different protein option.
- Serve with cucumber slices and jasmine rice for a complete meal.
