Sausage and Cheese Burrito

Ingredients
- Avocado
- 1, sliced
- Salsa
- 1 cup (store-bought or homemade)
- Salt

- Black pepper

- Onion
- 1 small, diced
- Bell peppers
- 1 cup, diced (mix of red and green)
- Cheddar cheese
- 1 cup, shredded
- Flour tortillas
- 4 (10-inch)
- Eggs
- 6, large
- Sausage
- 1 pound, breakfast sausage (or your choice of sausage)
Instructions
- In a skillet, cook the sausage over medium heat until browned and fully cooked, about 8-10 minutes. Remove from the skillet, drain excess fat, and set aside.
- In the same skillet, add the diced bell peppers and onion. Sauté until softened, about 5 minutes.
- In a bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet with the bell peppers and onion. Cook, stirring occasionally, until the eggs are scrambled and cooked to your liking, about 3-5 minutes.
- Warm the tortillas in a separate skillet or in the microwave until pliable, about 20 seconds in the microwave.
- To assemble, place a tortilla on a plate, layer with cooked sausage, scrambled eggs, and shredded cheddar cheese.
- Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito. Repeat with the remaining tortillas and filling.
- Serve the sausage and cheese burritos warm, accompanied by sliced avocado and salsa on the side.
