Servings: 2

Ingredients

Butter
2 tablespoons
Green onions
2, chopped
Cheddar cheese
1 cup, shredded
Black pepper
1/4 teaspoon, freshly ground
Salt
1/4 teaspoon
Milk
1/2 cup
Eggs
4, large
Mushrooms
1 cup, sliced
Sausage
1/2 cup, cooked and crumbled

Instructions

  1. Over medium heat, cook the sausage in a skillet until it is browned and cooked thoroughly. Once cooked, remove the sausage from the skillet and set it aside.
  2. In the same skillet, add the sliced mushrooms. Cook them until they have released their moisture and have become tender. Remove the mushrooms from the skillet and set them aside with the sausage.
  3. In a mixing bowl, whisk together the eggs, milk, salt, and freshly ground black pepper until well combined.
  4. Heat the butter in the skillet over medium heat. Once the butter has melted, pour the egg mixture into the skillet. Cook until the edges of the omelette start to set.
  5. On one half of the omelette, evenly sprinkle the cooked sausage, mushrooms, shredded cheddar cheese, and chopped green onions.
  6. Fold the other half of the omelette over the filling. Cook for an additional minute, or until the cheese is melted.
  7. Gently slide the completed omelette onto a plate and serve it hot. Enjoy this delightful omelette with a side of toasted baguette or a fresh fruit salad.
