Sausage and Onion Casserole with Creamy Mashed Potatoes

Sausage and Onion Casserole with Creamy Mashed Potatoes

This Sausage and Onion Casserole is a quintessential British comfort food, featuring plump sausages and caramelized onions nestled in a rich, hearty gravy, and topped with a blanket of creamy, buttery mashed potatoes. The casserole, with its layers of flavor and texture, is a meal in itself and a perfect pick for a family dinner or a friendly gathering. Its origins can be traced to the British love for meat and potato dishes, especially during the colder months.

Servings: 4

Ingredients

  • Whole Milk (1/2 cup)
  • Unsalted Butter (2 tablespoons)
  • Potatoes (4 large, peeled and quartered)
  • Salt and Pepper (to taste)
  • Tomato Paste (2 tablespoons)
  • Worcestershire Sauce (1 tablespoon)
  • Beef Stock (1 cup)
  • Olive Oil (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Onions (2 medium, thinly sliced)
  • Sausages (8 (preferably cumberland or a variety of your choice))

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Heat the olive oil in a large frying pan over medium-high heat. Add the sausages and cook until browned on all sides. Remove the sausages and set them aside.
  3. In the same pan, add the sliced onions and minced garlic. Cook until they become softened and caramelized, about 5-7 minutes.
  4. Stir in the beef stock, Worcestershire sauce, tomato paste, and season with salt and pepper. Bring the mixture to a simmer.
  5. Place the browned sausages in a casserole dish. Pour over the onion and stock mixture, ensuring the sausages are well-covered.
  6. Cover the casserole dish and bake in the preheated oven for 30 minutes.
  7. While the casserole is baking, place the quartered potatoes in a large pot. Cover with water and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
  8. Add the butter and milk to the pot with the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
  9. After 30 minutes, remove the casserole from the oven. Carefully spread the mashed potatoes on top of the casserole, covering the entire surface.
  10. Return the casserole to the oven, uncovered, and bake for an additional 30 minutes, or until the mashed potatoes are golden and the gravy is bubbling around the edges.
  11. Allow the casserole to rest for a few minutes before serving to allow the flavors to meld together. Enjoy!
