Sausage and Onion Casserole with Creamy Mashed Potatoes
This Sausage and Onion Casserole is a quintessential British comfort food, featuring plump sausages and caramelized onions nestled in a rich, hearty gravy, and topped with a blanket of creamy, buttery mashed potatoes. The casserole, with its layers of flavor and texture, is a meal in itself and a perfect pick for a family dinner or a friendly gathering. Its origins can be traced to the British love for meat and potato dishes, especially during the colder months.
Servings: 4
Ingredients
- Whole Milk (1/2 cup)
- Unsalted Butter (2 tablespoons)
- Potatoes (4 large, peeled and quartered)
- Salt and Pepper (to taste)
- Tomato Paste (2 tablespoons)
- Worcestershire Sauce (1 tablespoon)
- Beef Stock (1 cup)
- Olive Oil (2 tablespoons)
- Garlic (2 cloves, minced)
- Onions (2 medium, thinly sliced)
- Sausages (8 (preferably cumberland or a variety of your choice))
Instructions
- Preheat the oven to 350°F (180°C).
- Heat the olive oil in a large frying pan over medium-high heat. Add the sausages and cook until browned on all sides. Remove the sausages and set them aside.
- In the same pan, add the sliced onions and minced garlic. Cook until they become softened and caramelized, about 5-7 minutes.
- Stir in the beef stock, Worcestershire sauce, tomato paste, and season with salt and pepper. Bring the mixture to a simmer.
- Place the browned sausages in a casserole dish. Pour over the onion and stock mixture, ensuring the sausages are well-covered.
- Cover the casserole dish and bake in the preheated oven for 30 minutes.
- While the casserole is baking, place the quartered potatoes in a large pot. Cover with water and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
- Add the butter and milk to the pot with the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
- After 30 minutes, remove the casserole from the oven. Carefully spread the mashed potatoes on top of the casserole, covering the entire surface.
- Return the casserole to the oven, uncovered, and bake for an additional 30 minutes, or until the mashed potatoes are golden and the gravy is bubbling around the edges.
- Allow the casserole to rest for a few minutes before serving to allow the flavors to meld together. Enjoy!
