Italian Sausage Sandwich with Caramelized Onions & Peppers

Instructions
- Preheat your grill to medium-high heat.
- Grill the Italian sausages for about 10-12 minutes, turning occasionally, until they are evenly browned and cooked through.
- While the sausages are grilling, heat the olive oil in a skillet over medium heat.
- Add the thinly sliced onions and bell peppers to the skillet. Season with salt and pepper, and sauté until they are soft and caramelized, about 8-10 minutes.
- Slice the hoagie rolls in half lengthwise, and lightly toast them on the grill or in a toaster oven.
- Spread a teaspoon each of Dijon mustard on one side of the roll and mayonnaise on the other side.
- Place a slice of provolone cheese on the bottom half of each roll.
- Place a grilled sausage on top of the cheese.
- Generously top the sausages with the caramelized onions and bell peppers.
- Top with the other half of the roll and serve the sandwiches warm.
