Sautéed Swiss Chard with White Beans and Parmesan
This delightful Italian dish features vibrant Swiss chard sautéed to perfection and paired with creamy white beans and a sprinkle of Parmesan. It's a wholesome and nutritious option that reflects the rustic flavors of Italian cuisine, making it a wonderful side or main dish.
Ingredients
- 1 bunch, stems removed and leaves chopped Swiss chard
- 1 can (15 oz), drained and rinsed Canned white beans
- 2 tablespoons Olive oil
- 3 cloves, minced Garlic
- 1/4 teaspoon (adjust to taste) Red pepper flakes
- 1/2 cup Vegetable broth
- 2 tablespoons Lemon juice
- 1/4 cup, grated Parmesan cheese

Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and red pepper flakes, cooking until fragrant (about 1 minute).
- Add the chopped Swiss chard leaves and stems, sautéing for 3-4 minutes until they start to wilt.
- Stir in the white beans and vegetable broth, cooking for an additional 5-7 minutes until the chard is tender and the beans are heated through.
- Drizzle with lemon juice and stir to combine. Season with salt and black pepper to taste.
- Remove from heat and sprinkle with grated Parmesan cheese just before serving.
