Ingredients

Original recipe serves 4

Swiss chard
1 bunch, stems removed and leaves chopped
Canned white beans
1 can (15 oz), drained and rinsed
Olive oil
2 tablespoons
Garlic
3 cloves, minced
Red pepper flakes
1/4 teaspoon (adjust to taste)
Vegetable broth
1/2 cup
Lemon juice
2 tablespoons
Parmesan cheese
1/4 cup, grated
Salt
to taste
Black pepper
to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and red pepper flakes, cooking until fragrant (about 1 minute).
  3. Add the chopped Swiss chard leaves and stems, sautéing for 3-4 minutes until they start to wilt.
  4. Stir in the white beans and vegetable broth, cooking for an additional 5-7 minutes until the chard is tender and the beans are heated through.
  5. Drizzle with lemon juice and stir to combine. Season with salt and black pepper to taste.
  6. Remove from heat and sprinkle with grated Parmesan cheese just before serving.
