Herb-Infused Savory Pancakes

Ingredients
- Vegetable oil
- 2 tablespoons
- Unsalted butter
- 3 tablespoons, melted
- Egg
- 1
- Milk
- 1 cup
- Fresh herbs (parsley, chives, dill)
- 1/2 cup, finely chopped
- Black pepper
- 1/4 teaspoon
- Salt
- 1/2 teaspoon
- Baking powder
- 1 teaspoon
- All-purpose flour
- 1 cup
Instructions
- In a large bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Stir until well mixed.
- Add the finely chopped fresh herbs to the flour mixture and stir until the herbs are evenly distributed.
- In a separate bowl, combine the milk, egg, and melted butter. Whisk until the mixture is smooth and well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix to keep the pancakes light and fluffy.
- Heat the vegetable oil in a non-stick skillet over medium heat. Once the oil is hot, scoop 1/4 cup of the pancake batter onto the skillet for each pancake.
- Cook the pancakes for 2-3 minutes, or until bubbles form on the surface. Flip the pancakes and cook for another 2-3 minutes, until they are golden brown and fully cooked.
