Delight your taste buds with our Herb-Infused Savory Pancakes. Made from a medley of fresh, aromatic herbs and light, fluffy batter, these pancakes offer a unique and flavorful twist to traditional breakfast pancakes. They are not only delicious but also versatile, making them a perfect option for brunch, lunch, or a light dinner. These pancakes are inspired by the traditional 'Herb Blinis' from Russia, which are usually topped with sour cream and smoked salmon.

Servings: 4

Ingredients

Vegetable oil
2 tablespoons
Unsalted butter
3 tablespoons, melted
Egg
1
Milk
1 cup
Fresh herbs (parsley, chives, dill)
1/2 cup, finely chopped
Black pepper
1/4 teaspoon
Salt
1/2 teaspoon
Baking powder
1 teaspoon
All-purpose flour
1 cup

Instructions

  1. In a large bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Stir until well mixed.
  2. Add the finely chopped fresh herbs to the flour mixture and stir until the herbs are evenly distributed.
  3. In a separate bowl, combine the milk, egg, and melted butter. Whisk until the mixture is smooth and well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix to keep the pancakes light and fluffy.
  5. Heat the vegetable oil in a non-stick skillet over medium heat. Once the oil is hot, scoop 1/4 cup of the pancake batter onto the skillet for each pancake.
  6. Cook the pancakes for 2-3 minutes, or until bubbles form on the surface. Flip the pancakes and cook for another 2-3 minutes, until they are golden brown and fully cooked.
  7. Serve the pancakes warm. They pair wonderfully with toppings like sour cream, smoked salmon, or sautéed vegetables. You can also try them with a dollop of caviar for an authentic Russian experience!
